1 | Adjust oven rack to lower middle position and preheat oven to 350 degrees. Spray Pam in a large loaf tin and lightly dust with flour. |
2 | Whisk flour, sugar, baking soda and salt in a large bowl; set aside. |
3 | Use a spoon to mix mashed bananas, yogurt, eggs and vanilla in another bowl. |
4 | Lightly fold banana mixture into dry ingredients until batter looks thick and chunky. (Don't over-mix or your loaf will be tough and rubbery). |
5 | Scrape batter into loaf tin, and bake for about 55 minutes, until a toothpick inserted in the center comes out clean. Cool in the pan for at least 5 minutes and serve warm or at room temperature. Cut into 8 slices and cut those in half to make 16 pieces |
