Ingredients:
2 cups fresh broccoli florets
2 tbsp olive oil
1 tablespoon minced garlic
1 cup chopped tomatoes
1/2 cup grated Kraft Parmesan cheese
1 package of Extra Firm Tofu, chopped
salt to taste
ground black pepper to taste
1 box Gluten free pasta
Directions:
1 Blanch broccoli florets in a medium size saucepan, remove with slotted spoon. In same pan saute the minced garlic in the olive oil for 2 minutes, add tofu chunks. Add the chopped tomatoes and set aside.
2 In a large bowl, toss blanched broccoli, cooked tofu, and garlic/tomato mixture. Add grated Parmesan cheese, salt, and ground black pepper and mix well.
3 Cook pasta according to package directions, serve over pasta.
4 ENJOY!
